Salad greens require special attention. Wash your hands for at least 20 seconds with soap and water. Before and after preparing leafy greens. Look over your salad greens to make ure they're healthy. Discard any bruise or wilted leaves. If the lettuce appears wilted, do the following. Wash the leaves in cold water, for no more than three minutes. For leafy lettuces such as red tip lettuce, butterhead, romaine lettuce, endive, spinach, cabbage kale, and bok choy. Remove and discard the root end and separate the leaves and hold them under cold running water to remove any dirt.
