Fast forward to now and Stephanie is the co-founder and CEO of Jellatech: an early-stage startup working on creating cell-based collagen and gelatin. We also discuss the advantages of using animal cells over precision-fermentation, bioreactor innovation, differences to cell-based meat, and future opportunities for the company.
